HISTORICAL CULINARY SCHOOL

Day 1.

Arrival at the airport in Rijeka in the early morning, meeting with tour guide, departure to hotel Kanajt in Punat, accommodate in rooms, welcome cocktail and get knowing with plan of journey. In the afternoon visit to a Franciscan monastery Kosljun… in the middle of cove of Punat you can find an island named Kosljun which has been home for Franciscan over 550 years. All time through variable history of this region it was a center of ecclesiastic and cultural life of island Krk, center of literacy where Glagolitic script was cherished, where acted one secondary school on Croatian language. This monastery possess a lavishly equipped library where valuable incunabulum is protected, and special rarity is part of Ptolomejev atlas. We will visit ethnographic, numismatic and sacral collection. Through church and cloister will guide us one of Franciscan who lives here even today with its monastic life, and get us acquainted with his peaceful oasis in today’s fast life… D

Day 2.

After breakfast we will get to know with olive oil, the liquid gold island of Krk. First we will visit olive grove and see ancient olive trees, after that we will go to oil rafinery where experts will present us process of oil making. When we figure out how it is done today, we will show you how it was done long time ago on old tos, where you can try to spin the big stone wheel on your own. And now it is time to taste that precious oil, through tasting and presentation of other olive oil products like cosmetic, soaps, our guide will be an eminent expert. After the oil, naturally follows vine... we will visit Vrbnik, romantic stone town, center of producing vrbnicka zlahtina, the most precious vine on the island. Instead of lunch we will taste some domestic prosciutto and sheep milk cheese from island, and advisor of family winery will get to know us with žlahtina end other delicacy, like fig- brandy and… we won’t discover it all now!In the afternoon we will return in our hotel where we’ll beguine with our culinary school. For start we will get acquainted with traditional, simply meals from coastal Croatia on which were raised many generations of islanders. With our cooker we will prepare: fisherman and farm laborer dinner... B, SL, D

Day 3.

Today we will sightsee town Krk, capital town of the island. We will walk through roman center, cardom and dekumanusom, visit cathedral and crkvu Sv Kvirina, unique architectonic complex of linked one floor churches. We will see old Frankopan"s Castle on Kamplin square, with little stone roads fell of galleries and stores get down to Little gate, the see entrance to the town, drink a coffee in watch- tower end enjoy in the fragrances and view on the sea. We will spend afternoon in our culinary school. We will get acquainted with traditional cuisine of Croatian nobility. We will try to prepare demanding meals which were served in castles and summer residences of this beautiful island. After we take a rest and refresh in our rooms, we will enjoy in knights from Krk dinner accompanied with traditional music from local artists... B, D

Day 4.

After breakfast we will salute our hosts and leave Krk so we can continue further with second part of our journey through beauty and tastes of Croatian tradition and history. Journey leads us towards continental part and capital city Zagreb. First we will sightsee historical center and after that take a lunch in one restaurant which cherish tradition of civil cuisine. We will get know with characteristics of civil cuisine full of influences from Vienna, Pest, Ottoman empire but even Croatian county cuisine which took influence over saleswoman on the market. After lunch we will continue towards Zagorje, area from where comes a first class victual to Zagreb, home of saleswoman we have met at Dolac, the oldest market in town. But Zagorje has much more than that. That is an area full of history and stories, full of castles and manors, from which even today ladies and knights watch us. One of these manors is adopted in hotel. That is where we will settle and get to know that world of fairy tales… B, L, D

Day 5.

Today we will see villages in Zagorje. We will visit the only ethno-museum at open area in Croatia, old village Kumrovec. In that reconstructed real village from the end of 19. Century, we will present on demonstration of old handicrafts and tradition way of living. In village you can find a manor of noble family Erdody, and birth house of Josip Broz Tito, well known president or SFR Yugoslavia. When we refresh and take a rest in our hotel, we will continue with our education. Today we’ll prepare dinner from Zagorje, finding out what diligent villagers have eaten in this gentle area. When everything is over, we will enjoy in dinner we prepared by our selves, and have fun with tamburitza players till late in the night… B, D

Day 6.

Zagorje is the area from fairy tales, full of beautiful castles and it was a hard work to pick which one you will look around… first we will see Veliki Tabor which hides one of the most sadly love legend, story about Veronika Desinicka. After that we’ll continue our ride through hills full of wine yards to second pearl, castle Trakoscan. But there our fairytale won’t stop, in the afternoon we will present at knights tournament and try some noble skills guided by trained knights. When we get back to hotel we’ll relax on dinner with torches and guest performance of medieval juggling group… B, D

Day 7.

After breakfast we will immediately start to prepare a dinner for grand finale of our journey, Knights dinner, to relax a bit, in the afternoon we will visit typical vineyard cottage and cheer up with vine and snack. After we get back, we will take a rest and then continue with culinary school and preparing dinner. Last dinner on our journey will be a real renaissance fest. Besides enjoying in meals that we have prepared, we will be entertained by musicians, jugglers, ladies and knights. For the end we’ll make a true back through time… B, SL, D

Day 8.

After breakfast follows awarding of certificates. Now you will be able, when you get home, prove that you are a real expert in historical cuisine. Knights will even contribute at fest, they’ll make for us salute with mead from chalice, before we return in boring every day life… follows transfer to Zagreb airport where we’ll wish to you a pleasant journey… B

Maraschino is a bittersweet, clear liqueur flavored with Marasca cherries, which are grown around the Dalmatian city of Zadar in Croatia. It is one of the very few liqueurs in the world produced by distillation. The liqueur's distinctive flavor comes from the Marasca cherry, and the crushed cherry pits lend an almond-like flavor to Maraschino. Honey is also part of the ancient recipe. The distillate is allowed to mature for two years in Finnish ash vats (this wood does not lend its colour even after many years of maturing), and is then diluted and sugared. It is typically bottled in a straw-coated bottle. The liqueur has been made sinced the Middle Ages in Zadar. In peace and quietness of Zadar Dominican monastery, at theMaraschino - Travel to Croatia beginning of 16th century, the recipe of authentic Zadar liqueur was made and noted, liqueur which for the first time was prepared just by the apothecaries of the Dominican monastery.Special and full flavoured liqueur was known under the name of “ROSOLJ” (which came from the word “ros solis”- “the sun dew”). Later on, this liqueur was named MARASCHINO, as it was produced from the essence of ripe fruits of Dalmatian cherry marasca as well as from the leaves of its sprigs. In 18th century when at Zadar started the industrial production of liqueurs, Maraschino set out from Zadar and “sailed” into every more important European ports and metropolis. After the destruction of the Maraschino - Travel to Croatiacity of Zara in the Second World War, two original factories were closed and one moved to Italy. A new factory was established in Zadar in Croatia. At present, two factories are the holders of the brand Maraschino Zadarski/Maraschino di Zara, in Croatia and Italy. Although Maraschino cherries are traditionally preserved in maraschino liqueur, today most maraschino cherries are made using artificial ingredients and are non-alcoholic.
